Well, I have 2 thoughts, and I'm sure you'll hear from those with more
experience.

First  -  you are probably over training and not allowing enough recovery
time in-between.   (Can anyone offer links to good reading for her?)

Second - I had the same problem for awhile, I could ride up a mountain but
not climb a flight of stairs without gasping.  Turns out it was my asthma.
Once I started treating the asthma, the breathing got better.  Highly
recommend doctor visit, much as you dislike it :-).
